I’m. So. Cold. My hubby, my son…OVENS. Seriously radiating heat, all. the. time. I cannot wear enough layers to keep me toasty, so I have to depend on feeding myself hot, filling foods. I need soups, stews, and chilis, (oh my!). So that’s just what I did the other night….made up a big ol’ batch of chili and this liveGfree Gluten Free Cornbread Mix to go with it.
Making it? Easy peasy. You’ll need an egg, 3/4 cup milk, and a 1/2 cup of oil. Mix everything together, plop it in a greased 8×8 pan and bake!
This made a nice pan of cornbread. It wasn’t amazing, and it wasn’t horrible, but it was tasty and would be a good addition to any pot of chili or stew you’re cooking up. The only thing I was surprised about is the warning that this may contain peanuts and tree nuts. Typically the liveGfree brand is pretty good not only about being gluten free, but being other “major allergen” free. The liveGfree Baked Chewy Bars we regularly buy, are free from gluten, peanuts, tree nuts, dairy, egg, soy…all the big hitters. So to see this may contain peanuts/tree nuts, while not a deal breaker for us, just threw me a little.
I don’t think this is something ALDI carries every day (Seasonal, perhaps?), so you won’t want to wait on this one. I also saw in this week’s ad you can get this as a Cheddar Biscuit Mix! If it makes anything like those Red Lobster biscuits, I’m going to go out and stock up for sure! Grab a box for $2.29 and get baking!
